- Assist in the preparation and assembly of sushi rolls, nigiri, maki, and sashimi.
- Cook and season sushi rice according to traditional techniques and chef specifications.
- Clean, cut, and portion seafood and vegetables for sushi production.
- Maintain cleanliness and organization of the sushi station at all times.
- Ensure all ingredients are fresh, properly stored, and rotated (FIFO method).
- Support the Sushi Chef with mise en place and daily prep tasks.
- Follow standard recipes, portion sizes, and presentation guidelines.
- Uphold food safety and hygiene practices in accordance with health and safety regulations.
- Assist with setting up and closing the sushi section during opening and closing shifts.
- 1–2 years’ experience in a sushi or Japanese cuisine kitchen preferred.
- Basic knowledge of sushi preparation, seafood handling, and Japanese ingredients.
- Strong knife handling and food prep skills.
- Attention to detail, speed, and cleanliness.
- Ability to follow instructions, work as part of a team, and take direction from senior chefs.
- Willingness to learn and grow within a fast-paced kitchen environment.
- Good personal hygiene and grooming.
- Flexibility to work evenings, weekends, and holidays.
