We are seeking an experienced and passionate Senior Chocolate Technician with 6–8 years of hands-on experience in chocolate production. The ideal candidate must have extensive knowledge of chocolate tempering, coating, and molding techniques, as well as deep familiarity with various chocolate types, fillings, ganache, and drag?e. Prior experience working in a chocolate manufacturing facility is essential.Key Responsibilities:
- Operate and maintain tempering and enrobing machines with precision and efficiency.
- Prepare a wide range of chocolate products, including filled chocolates, ganaches, pralines, and drag?e.
- Ensure high-quality standards in taste, texture, and presentation across all chocolate items.
- Monitor temperature, viscosity, and other critical production parameters.
- Troubleshoot production issues and ensure smooth daily operations.
- Collaborate with the R&D or culinary team to develop and refine new chocolate recipes.
- Maintain hygiene and safety standards according to food manufacturing regulations.
- 6–8 years of professional experience in chocolate production, preferably in a manufacturing or industrial setting.
- Proficient in operating tempering machines (e.g., Selmi, FBM, or equivalent) and enrobing lines.
- In-depth knowledge of chocolate types, fillings, ganache formulations, and drag?e production.
- Strong attention to detail and craftsmanship in chocolate finishing.
- Ability to work independently and as part of a team.
- Good understanding of food safety and quality control protocols.
- Certificate or formal training in pastry arts or chocolate making is a plus.
- Experience with high-volume chocolate production or artisanal?techniques.
