The Culinary Steward is the operational backbone of the Qiddiya Golf hygiene team. Responsible for the cleaning and sanitisation of all food production and service equipment, this role ensures that the "Back of House" remains immaculate and compliant with world-class safety standards. Operating within a 5-star luxury environment, the Culinary Steward safeguards the club’s valuable assets—fine china, crystal glassware, and silverware—ensuring they are cleaned, polished, and stored correctly to minimise breakage and ensure the seamless flow of service.ResponsibilitiesThe purpose of this position is to provide the culinary and service teams with clean, sanitised tools to do their jobs. The scope covers three main areas: the "Dish Pit" (cleaning plates and cutlery), the "Pot Wash" (scrubbing heavy kitchen equipment), and general "Back of House" cleaning (floors, walls, and garbage removal). The Culinary Steward is responsible for maintaining the hygiene chain, preventing cross-contamination, and managing waste disposal protocols.Ware Washing & Equipment Management
  • Operate the flight-type dishwashing and glass-washing machines, ensuring the correct racks are used to prevent breakage.
  • Sort dirty equipment arriving at the return station, separating silver, china, and glass to prevent scratching.
  • Perform the "Three-Sink Method" (Wash, Rinse, Sanitise) for items that cannot be machine-washed.
  • Polish flatware (cutlery) and glassware immediately after washing to ensure they are water-spot free and ready for 5-star service.
  • Return clean equipment to the correct designated storage areas or service stations, ensuring the chefs and waiters never run out of supplies during a rush.
Heavy Cleaning (Pot Wash & Kitchen Maintenance)
  • Scrub and sanitise heavy kitchen pots, pans, baking sheets, and braising trays, removing burnt-on food and grease effectively.
  • Clean and degrease kitchen floors, walls, and ventilation hoods according to the daily cleaning schedule.
  • Deep clean the dishwashing machines at the end of every shift, cleaning filters and descaling spray arms to ensure optimal performance.
Waste Management & Hygiene
  • Remove trash and food waste from the kitchen frequently, transporting it to the climate-controlled garbage room.
  • Separate waste streams strictly (Organic, Plastic, Glass, General) in adherence to Qiddiya’s environmental sustainability goals.
  • Maintain the cleanliness of the loading dock and bin areas, hosing them down to prevent odours and pests.
  • Handle cleaning chemicals safely, wearing the appropriate Personal Protective Equipment (PPE) such as gloves, aprons, and goggles.
RequirementsEducation & Experience
  • High School Diploma preferred.
  • Minimum of 1–2 years of experience in a stewarding or cleaning role within a hotel, restaurant, or hospital.
  • Experience operating industrial cleaning machinery is an advantage.
Technical Skills
  • Physical Stamina: Ability to stand for 8–10 hours, lift heavy racks of glass (up to 20kg), and work in a hot, humid environment.
  • Chemical Safety: Basic understanding of which chemicals are used for degreasing vs. sanitising.
  • Machine Operation: Ability to load and unload industrial dishwashers efficiently.
  • Language: Basic understanding of English to follow safety instructions and chemical labels.
