- Manage the day-to-day operations of the pastry section, ensuring quality, consistency, and creativity in all outputs.
- Prepare and execute a range of pastry items including plated desserts, baked goods, tarts, mousses, African-inspired sweets, and more.
- Collaborate with the Head Chef on menu development, seasonal offerings, and dessert specials.
- Create visually stunning presentations that complement the Zulu-inspired dining experience.
- Supervise and mentor junior pastry team members and apprentices.
- Maintain high standards of cleanliness, organization, and food hygiene in the pastry area.
- Oversee inventory, stock rotation, and requisitions for the pastry station.
- Ensure accurate portioning, cost control, and minimal waste.
- Stay informed about industry trends and emerging pastry techniques.
- Be flexible and responsive to special guest requests, dietary needs, or themed events.
- Maintain calm and focus during high-volume service, while delivering high-quality plated desserts.
- 2–4 years of pastry kitchen experience in a high-end, concept-driven restaurant or hotel.
- Proven ability to lead a pastry section independently.
- Solid knowledge of baking, chocolate work, sugar work, custards, glazes, and cold desserts.
- Strong understanding of flavor balance and plating aesthetics.
- Creative mindset with an interest in African and indigenous ingredients or willingness to learn.
- Highly organized, detail-oriented, and disciplined.
- Strong communication skills and ability to train and supervise junior staff.
- Flexibility to work evenings, weekends, and holidays.
